• 1⁄2 cup kalamata olives, pitted and sliced 

• 2 Tbsp. feta cheese 

• 1 tsp. parsley, chopped 

• 1 tsp. mint, chopped 

• 1 tsp. basil, chopped 

• 1⁄4 tsp. dried oregano 

Lemon Dressing 

• 1 tsp. lemon zest 

• 2 Tbsp. lemon juice 

• 1 Tbsp. red wine vinegar 

• 1⁄4 tsp. Kosher salt 

• 1⁄4 tsp. black pepper 

• 3 Tbsp. Extra-virgin olive oil  

Directions

Couscous 

Step 1: In a medium saucepan, bring water, salt, and olive oil to a boil. Add the couscous and stir quickly. Turn off the heat and cover.
