Cultural Meaning
Sausage making has deep roots in culinary traditions across the globe. Each region has its take, using the meats and spices available locally. This recipe is inspired by those traditions but tailored for a health-conscious lifestyle, reflecting today's global trend towards healthier eating without compromising cultural heritage.
The Recipe
Ingredients
• 1 lb ground chicken breast
• 1 large clove garlic (minced)
• 1⁄4 onion (minced)
• 1 Tbsp. oregano (dry)
• Juice of 1/2 lemon
• 1/2 cup breadcrumbs (Italian or panko)
• 2 Tbsp. Mayo (light or non-fat) • Salt and pepper to taste
Directions
Step 1: Combine the spices until well incorporated in a medium bowl.
Step 2: Add the ground chicken and delicately and thoroughly incorporate the mixture–do not over-mix, as the mixture will become tough.
Step 3: Cover and refrigerate for 24 hours.
Step 4: Remove the sausage mixture from the refrigerator. The mixture can be used in a number of ways—it can be crumbled in pasta, tacos, salads, or over rice.
Step 5: Heat olive oil over medium-high heat for 1-2 minutes in a medium saucepan or cast-iron skillet. Step 6: For crumbles, cook the mixture for 5-7 minutes, stirring every 2 minutes. If cooking patties, cook on the first side for 3-5 minutes and 3-4 minutes on the other side—the cooking time will depend on the size of the patties. The internal temperature should reach 165° F.
Enjoy this Homemade Ground Chicken Sausage as a flavorful addition to your favorite dishes, knowing that you are choosing a healthier option just as satisfying and delicious as its traditional counterparts.
